September is a great time to head off Blackberry picking and there are plenty of tasty recipes which young ones (& old ones!) will love. One our favourite is Blackberry Fool, and here’s our favourite recipe:
- Puree around 500g of blackberries with 150g sugar (as we make it a lot for our little ones, we then like to push the mixture through a sieve to remove the pips)
- Add some fresh lemon juice (to taste, anything up to the juice from one lemon)
- Whisk 400ml of double cream with a couple of drops vanilla essence (optional) , until starting to thicken and carefully fold this into the blackberry mixture – you can vary the amount of cream depending on how strong you like the blackberry taste to be)
- Pop in the fridge to chill and then enjoy….
