{"id":262,"date":"2010-10-19T21:04:59","date_gmt":"2010-10-19T20:04:59","guid":{"rendered":"http:\/\/www.funkymoose.co.uk\/blog\/?p=262"},"modified":"2010-10-19T21:04:59","modified_gmt":"2010-10-19T20:04:59","slug":"our-favourite-pumpkin-soup-recipe","status":"publish","type":"post","link":"https:\/\/www.funkymoose.co.uk\/blog\/our-favourite-pumpkin-soup-recipe\/","title":{"rendered":"Our favourite Pumpkin Soup recipe"},"content":{"rendered":"<p>Recipe provides 4 generous portions<\/p>\n<ul>\n<li> 1kg peeled, deseeded pumpkin<\/li>\n<li>4 medium cloves garlic, unpeeled<\/li>\n<li>1 tablespoon oil<\/li>\n<li> 1 large onion, finely chopped<\/li>\n<li> 1\/2 teaspoon ground nutmeg<\/li>\n<li> 1 teaspoon ground cumin<\/li>\n<li> 1 litre vegetable stock<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li> Sour cream and ground nutmeg for serving<\/li>\n<\/ul>\n<p>Chop pumpkin into pieces (around 4cm\u00a0 x 2cm but don&#8217;t worry to much) and place in a baking tray along with the (unpeeled) garlic cloves. Drizzle with some oil and pop in the oven at 190 degrees Celsius.\u00a0 Remove the garlic after around 15 minutes (leave to the side for now) and continue cooking the pumpkin until tender.<br \/>\nHeat the remaining oil in a large saucepan, and add the onion, nutmeg, cumin and\u00a0 pepper (to taste). Cook for a minute or two (do keep stirring).<br \/>\nThen add the pumpkin and vegetable stock and bring to the boil.
